Summer is in full force, and what better way to preserve your fruits, vegetables, and meats after harvesting, than by canning! If you’re using a pressure canner, it’s very important to check the pressure gauge frequently, to verify that the gauge is reading the pressure (psi) correctly.

Pressure gauges that are off by more than 2 psi, need to be replaced. It is also important to check to see if all the parts on your canner are functioning and securely fitted onto the pressure canner, especially the canner gasket.
